Berries in Summer – What Could Be Better?

National Berry Month is July and it will soon be gone.  However, the delight of berries can enjoyed all summer.  See which of these recipes appeals to you.

Blueberry Smoothie

Ingredients

  • 1 large pear
  • ½ cup of grapes
  • 1 cup of blueberries

Instructions

  1. Wash the pear thoroughly, and remove stem and seeds. Slice into appropriate sizes.
  2. Remove grapes from stem, and then wash grapes and blueberries thoroughly.
  3. Add pear, grapes and blueberries to juicer.
  4. Enjoy! Pour over ice, if desired.

 

Cherry Berry

Ingredients

  • 2 cups of sliced cherry tomatoes
  • 1/8 cup of sliced pears
  • 1/4 cup of frozen blueberries
  • 1/4 cup of frozen raspberries

Instructions

  1. Prepare frozen blueberries and raspberries.
  2. Wash cherry tomatoes thoroughly.
  3. Wash pears thoroughly and slice into appropriate sizes, with peel intact.
  4. Put lever on “close.” Alternate the order of ingredient insertion.

 

Raspberry Peach Pops

Ingredients:

Directions:

  1. To make the raspberry layer, purée raspberries, Prosecco, Sparkling Ice Black Raspberry, and sugar in a blender until very smooth.
  2. Fill each popsicle mold ½ full with raspberry mixture.
  3. Freeze while you make the peach purée.
  4. To make the peach layer, purée peaches, Prosecco, Sparkling Ice Peach Nectarine, and sugar in a blender until very smooth.
  5. Pour peach mixture over raspberry mixture to fill molds.
  6. Freeze until firm, at least 2 hours.

 

Sparkling Pimm’s Punch

Ingredients

  • 1 blood orange, sliced
  • 1 lemon, sliced
  • 2 cucumbers, sliced
  • 1 lb whole strawberries
  • 1 bunch fresh mint leaves
  • One 750-ml bottle Pimm’s No. 1
  • 1 cup gin
  • 4 1/2 cups  Sparkling Ice Strawberry Lemonade

Directions

  1. In a large punch bowl, combine the blood oranges, lemons, cucumbers, strawberries, and half of the mint.
  2. Pour in the Pimm’s, gin, and Sparkling Ice Strawberry Lemonade, stir until combined.
  3. Fill glasses with ice and ladle in the punch, garnish with the remaining mint and serve.

 

Red, White and Blue, Berry Mule

Ingredients

  • 2 oz berry Vodka (blueberry or raspberry)
  • 6 oz Extra Spicy Brooklyn Crafted Ginger Beer Mini
  • Blueberries
  • Blackberries

Instructions

  1. Muddle blueberries and blackberries in shaker.
  2. Add vodka and shake.
  3. Fill Moscow mule mug with ice.
  4. Pour in muddled berries and vodka and fill with Brooklyn Crafted (roughly 6oz).
  5. Garnish with blueberries and blackberries.
